What made you decide to open your own small business and how long have you been in operation?
Salt Block Biscuit Co. opened September 21, 2020. Owning and operating a bakery and cafe is my lifetime dream. I was raised on my family’s farm north of Dayton. Growing up, working on the farm, I learned so much about hard work, discipline and raising, growing and preparing food.
My passion for cooking and baking stems from my mother and grandmother. Bringing people together over a meal is what warms my heart. When it came time to go to college, I decided to go to culinary school. From there, I’ve worked in kitchens ever since. If you know me; you know that I love to bring people together, with food, of course.
Working in so many kitchens over the years, I always had a passion and vision to create my own. My husband Dan is a great motivator. Dan, along with many friends, family members, and lifetime customers motivated me to open my own bakery and cafe. Here we are!
What do you enjoy about working in downtown Dayton?
I’ve created so many great memories growing up in downtown Dayton — I mean really, the memories are endless! Working in downtown Dayton is a celebration of life; we experience so many different types of people, from different backgrounds with unique life experiences. It’s always such a blast and no day is the same.
Being located in the Fireblocks District, we meet so many customers who live upstairs who’ve recently moved to Dayton. As experienced downtown Daytonians, my team and I feel like ambassadors to their experience.
Tell us something about your business that may surprise people to learn.
In response to the pandemic, we created an entire segment of our business around tinned seafoods. Tinned seafoods hold integrity for years (literally) and are packed with sophisticated flavor. During this time, we thought it would be fun for our customers to create little charcuterie-style meals with the tinned seafoods — we call these Planks!
How is your business coping with the pandemic and how can people support you now?
Of course we would have loved having a GRAND grand opening; welcoming everyone in from the city. Due to the pandemic, we scaled back significantly and hosted very small, intimate, socially distant preview parties. The upside to scaling back is that you truly get to meet every customer during this time; whether its someone stopping by or calling in to place an order. We have the time and opportunity to really get to know our customers well.
To ensure safety for our team members and guests, we wear masks, practice social distancing, only seating 25% of our dining room capacity is opened and we follow strict cleanliness and sanitation practices.
For convenience, we’ve launched an online bakery; for customers to buy biscuits, cornbread, cakes, cookies and our holiday packages. Additionally, we are offering carry-out service.
We are just extremely grateful to be in such a supportive and warm community during these times!
